Beetroot crackers with hummus, feta and roasted zucchini

Hummus Salad Recipe On Holiroots Cracker

Ingredients

  • Holiroots beetroot crackers (as many as you like 😉)
  • Hummus
  • Feta cheese (or a vegan alternative)
  • Zucchini
  • Cherry tomatoes
  • Cucumber
  • Lettuce
  • Spices of choice (such as paprika, cumin, ras el hanout)

This nutritious lunch comes together in no time!

Slice up the zucchini into thin slices, then coat them in some olive oil and spices of your choosing. In this recipe, we chose to use a bit of paprika, cumin and ras el hanout because those are the key flavours in hummus. Pro tip: If you want to make your own hummus, check out our other recipes!

Then, throw the zucchini slices into the airfryer or oven at 200°C for around 5 to 7 minutes, check on them regularly. If you don’t want to spend too much time in the kitchen or you just don’t have an oven nearby, then buy canned grilled vegetables.

While the zucchini is baking, cut the cherry tomatoes and cucumber up into small pieces.

Throw everything on your favourite holi-licious crackers! The hummus and grilled vegetables will form a sweet base for the savory salad on top making the taste phenomenal! Even though it is such a simple recipe, we can eat this over and over again and not get sick of it.😍
